Scrambled Dog, Dinglewood Pharmacy (Georgia)

Back around 1946, an inventive Columbus, Georgia, restaurateur decided to create a unique hot dog dish with boiled chopped franks smothered in chili, onions and pickles served with a substantial handful of oyster crackers on top that was intended to be consumed with utensils. That diner went out of business, but its Scrambled Dog stuck around, becoming a Columbus-area mainstay. It's been on the menu, true to its original form, for more than 50 years at the century-old Dinglewood Pharmacy, where it's served in a porcelain relish dish and a spoon. This regional classic is still so popular that accounts for 85 percent of the independent pharmacy's soda fountain sales.

Griddle-Fried Franks, Deerhead Hot Dogs (Delaware)

Split griddle-fried franks are an obligatory Delaware rite of passage during the summer months. For in-the-know Delawareans, these crisp dogs drum up ardent everyday affection akin to Joe Biden' s obsession with aviator sunglasses. Deerhead Hot Dogs has been center-slicing and crisping up its dogs according to local tradition since 1935. Those side-by-side halves are cradled in a soft dinner roll-like bun with compulsory mustard, onions and a healthy serving of its secret tomato-based sauce thatâ s like a slightly spicy, sweet and tangy cross between standard chili and the liquid that comes in a can of Heinz baked beans.

West Virginia-Style Hot Dog


Directions

Grilled or Boiled Hot Dog

Cook on hot oiled grates, turning, until charred, about 5 minutes. Or cook in boiling water or beer, 4 to 6 minutes.

Chili

Combine 1 pound ground beef, 1/2 grated onion, 1 cup tomato sauce and one 6-ounce can tomato paste in a large pot. Stir in 1 tablespoon each chili powder and sugar, 3/4 teaspoon kosher salt, 1/2 teaspoon each pepper and garlic salt and 1 cup water. Add 1 bay leaf, then cover and simmer over medium-low heat until thick, about 2 hours. Stir in 1 1/2 teaspoons white wine vinegar and simmer 30 more minutes. Remove the bay leaf.

Spicy Bean Chilli Dog

  • 1 hot dog
  • 1 sub roll
  • 1 red cherry pepper, seeded and finely chopped
  • 1 green chilli pepper, seeded and finely chopped
  • 1 garlic clove, peeled and finely chopped
  • 1 teaspoon freshly chopped corander/cilantro, plus a little extra to garnish
  • Salt and pepper
  • Olive oil for frying
  • 1 tablespoon canned chopped tomatoes in tomato juice
  • 1 tablespoon canned red kidney beans, rinsed

To Make

Pour about a tablespoon of olive oil in to a saucepan and gently heat. Add the chillies and garlic and fry off for a minute or so, stirring with a wooden spoon. Season with salt and pepper.

Pour in the tomatoes and add the kidney beans. Stir well and bring to a simmer for about five minutes - stirring frequently - until a thick sauce is formed.
Stir in most of the coriander at the very last minute, remembering to reserve some to garnish.

Lay the hot dog in the cut open sub roll, carefully spoon on the sauce and garnish with the last of the coriander/cilantro.

Chili Dogs

Tyler makes an easy, beefy chili spiked with ketchup and mustard, then spoons it over grilled dogs and tops them off with grated cheddar.

  • Extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 pound lean ground beef
  • 1 medium jar ketchup, about 2 1/2 cups
  • 1 teaspoon chili powder
  • 2 tablespoons prepared yellow mustard
  • Kosher salt and freshly ground black pepper
  • 4 all-beef hot dogs (recommended: Ball Park)
  • 4 hot dog rolls
  • 1/2 cup grated Cheddar

To Make

Put a skillet over medium heat and drizzle in a 2-count of olive oil. When the oil gets hazy, add the onion and garlic and cook, stirring, until it is soft and translucent, about 5 minutes. Add the ground beef, breaking it up with the back of a spoon, and cook until nicely browned, about 10 more minutes. Stir in the ketchup, chili powder, and mustard and simmer for 15 minutes until thickened. Season with salt and pepper.
While the chili is cooking, get the grill going. Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel. Then carefully and quickly wipe the hot grates of the grill to make a nonstick grilling surface.
Bring a pot of water up to a simmer and parboil the dogs for about 5 minutes. Take them out of the water, pat them dry, and grill them just long enough to mark them. (That'll give them a grilled flavor too.) Brush the insides of the rolls with olive oil and lay them face down on the grill; cook until toasty. To serve, put a dog in each roll and top with the chili and some Cheddar.
